Chonklate Chip Cookies

Makes 16 very large chocolate chip cookies. Based on Joshua Weissman's recipe which was imitating the Levain Bakery chocolate chip walnut cookies.

1 1⁄4 cups unsalted butter melt mix mix mix and refrigerate overnight form 95 g balls, bake at 400°F for 17 minutes
285 g light brown sugar
140 g granulated sugar
2 eggs + 3 yolks
2 tsp vanilla extract
460 g all-purpose flour mix
35 g corn starch
1⁄2 tsp baking soda
1 tsp (7 g) table salt
9 oz dark chocolate chop coarsely
120 g walnuts chop
