Chonklate Chip Cookies

Makes 16 very large chocolate chip cookies. Based on Joshua Weissman's recipe which was imitating the Levain Bakery chocolate chip walnut cookies.

1 1⁄4 cups unsalted butter melt mix mix mix and refrigerate overnight form 95 g balls, bake on stacked sheet pans at 385°F convect for 18 minutes
300 g light brown sugar
150 g granulated sugar
2 eggs + 2 yolks
1 Tbsp vanilla extract
450 g all-purpose flour mix
35 g corn starch
1⁄2 tsp baking soda
1 1⁄4 tsp (8 g) table salt
10 oz dark (60%) chocolate chop coarsely
120 g walnuts chop
